Edamame and parma ham salad

The perfect start to a perfect meal.

Serves: 4
Preparation: 10-15 minutes

125g (4.5 oz) parma ham 
100g (3.5 oz) watercress or mixed salad leaves
100g (3.5 oz) punnet of edamame
6 radishes, cut into wedges
Onion sprouts, to garnish (optional)
Pine nuts (optional
 
Dressing:
2 Tbsp olive oil
1 Tbsp red wine vinegar
Juice of 1 lemon
1 tsp brown sugar

Blanch the edamame beans
Prepare
the dressing by combing the ingredients in a bowl. Whisk to combine and set aside. 

Place all the ingredients for the salad, except for the dressing in a bowl and gently toss to coat.
Serve drizzled with the dressing.


Notes:
Edamame is green soya beans, you can replace it if sliced greenbeans or aspargus in this recipe. Replace the parma ham with serrano ham or other preffered variety.
Sliced peaches or nectarines will also worked well in this salad.
